Pecan Caramel Spider
Makes: 24

Ingredients -
5 ½ oz Pecans, Toasted
8 oz Heavy Cream
8 oz Granular Sugar
5 ½ oz Corn Syrup, Light
¼ oz Vanilla Extract
1 ½ oz Butter, Unsalted
¼ tsp Salt
2 lb Dark Chocolate

Method:
Set the pecans in groups of three on the silpat, resembling a spider.

Temper the dark chocolate and pipe the spider legs (see photo)

Caramel: Warm the cream and set aside. Place the sugar and corn syrup in a sauce pan.

Cook the sugar to a caramel and add the hot cream slowly.
Continue to cook to 305 f / 152 c.

Whisk the butter and salt into the caramel, slowly. Cook the mixture to 240 f / 116c

Remove from the heat and cool for two minutes.

Using a pastry funnel or metal spoon place a small amount of caramel over each pecan cluster.

When the caramels have cooled dip in the tempered chocolate and place back on the silpat mat.

Before the chocolate can cool attach the legs (see photo)
